I would look at itineraries from Holland America, Oceania, Azamara and Viking. Tauck Tours offers land/sea cruises.

Probably something on ground level or be sure to check if resort has elevators (many don't). You might want to check out Dreams Puerto Aventuras or Catalonia Riviera Maya/Yucatan.
