I'd advise just renting a normal fun car like a Mustang convertible which is the car basically every Brit who comes to America wants, dropping it in Vegas and renting something fun out there to drive around town. They will have a much larger inventory of high end cars than San Francisco. Vegas, LA, Miami are where the fun cars are.
A V8 has more power than a V6 and can be more fun to drive. And yes, it will be a V6. Most rental cars are the base model vehicle. That said, I don't think you will be unhappy with the V6. My Camaro is a V6 and has lots of fun power - 312 horses is great. I don't know how many horses the V6 Mustang has, but I am sure it is comparable.
