I used a local sim (Viettel) that way you get messages from the driver without any issues. I've haven't used a UK sim with Grab in Vietnam, so I can't confirm if it works the same as a local sim. But generally I found Grab app works well, cheaper then taxis and mostly the cars are clean and tidy compared to some taxis I've been in.
Answer 1 of 2: I came across apps of both Mailinh and Vinasun taxis on play store. Has anyone used them? If so, how reliable are the apps and do they eliminate the risks of being scammed?

The guy at the store cut a normal sim card to an iPhone sim card and it worked perfectly. It's very cheap, just about £15. I could use it to access internet during the trip through all main cities, Hanoi, Da Nang, Hoi An, Nha Trang, Da Lat and Ho Chi Minh City. Very convenient. Have a good time in Vietnam. Hello everyone, Just got from our four days in Hanoi and want to provide some information about riding apps in Vietnam and Hanoi in particular.. There are currently four (might be more but I have not found) apps: Grab - the most known and took over Uber's operations in SEA counties, GoViet - this is Vietnam's version of GoJek, FastGo and Be.
