You will get pretty close to whatever is the official daily exchange rate when you make your withdrawal. Even with your bank's 3% charge you will likely get a better rate than exchanging dollars here.

Imo, I think you’ll be fine with that budget. You really should get out and explore and eat breakfast and dinner at all the local restaurants in PV.
