It's a bit fiddly to get the balance in both ears, try pushing it partly into the socket until it balances out. I also prefer to use my own headphones.

T-Mobile have announced a partnership with Go-Go Internet where you can now send texts from your phone via a WiFi connection whilst in the air. Bluetooth has a range of about 10M and WiFi can go out to over a 100M, so I would think that running Bluetooth headphones should be fine given the much lower powered signal.
