I went online a few weeks later, changed the inbound date, was charged and received a confirmation email with the change. All set. But 5 days later I receive an email from Expedia saying that the change was actually not done and I have been calling them every day and waiting 60-90 minutes every time and still no solution.

It is unfortunate, but that is the risk you took. In saying that, there are cases where airlines would assist in credit shells, rebooking for a fee etc.
