For example Migros stores accept debit cards in Turkey. Just make sure that your gift card is good for international transactions and is not valid only in US.
Involving 3rd parties can be fraught. So many gift cards get wasted, When I want to do something like this I create a personalised gift certificate on the computer, and then hand over the money (or make the booking) when the recipient has decided how to use it.
