(The Swiftkey keyboard I use day-to-day in English supports an Icelandic keyboard as well, for instance, but I haven't actually tried to use it in Iceland. I think there is a one-month free trial.)

   There are also very good and free map apps like maps.me which allow you to download maps. These should provide you with detailed road maps. Both will work off-line (ie. No cell or wifi access) and will use your phone gps to find your location. However, if you need detailed trail maps or elevations etc, you will need to buy a proper paper map.
