Like whitestoneny said, a standard polo shirt will do. Even jeans is accepted in 90% of the restaurants (provided you don't wear a rock band T-shirt over it). Nicer restaurants will be fine with normal clean pants and a clean standard shirt. Quebec province is a pretty casual and laid back culture =)

Having never travelled to Eastern Provinces, other than Newfoundland, we need some guidance and suggestions as to best route. We are booked 2 days in Digby Nova Scotia and 3 in Lunenburg.
