Went back to Google Flights, clicked "Book with Air Canada", and presto, those flights were loaded up on Air Canada's site, ready to book. And I did, directly with the airline. The cookie doesn't matter per my experiments. The pricing seems to be consistent regardless of search history. Note that Google Flights or ITA Matrix (same engine) don't always have the updated price for every airline. You always need to go to the airilne website to check. Don't blame the search engines if you can't find the fare.

Perfectly fine to book with the airline following a link form Google flights. Definitely easier to book multi-city itineraries this way.
