My fantasy football league conducted our draft in a Flamingo pool cabana a few years back. Worked out great. I would check into Lagasse's Stadium at the Palazzo or the ESPY room inside ESPN ZONE at NYNY. A conference room works but you'll have to cater in food/drink. That gets expensive.
