As Lyft works just like Uber (although with a bit less political baggage) I suspect the same problems would arise if you didn't want to turn on your phone to avoid charges. Just go back to the app to add a tip if a reminder doesn't pop up on your phone. 15–20% is correct. I'd bet most people do 15–18% rather than 20.

Yes the same app works as per your US phone. But that could be awkward unless you have a data plan. There’s usually no need at all to use Uber in London. Public transport is plentiful and cheap.
