I've never understood why anyone would cross Eastern Arizona on the interstate anyway, especially since hwy 60 is faster and has lots fewer trucks. If you travel on the weekend though, the best part of all is a visit to Pie Town. The little Pie-O-Neer is the real deal. The pies come warm right out of the oven every 15 minutes and cannot be beat.
