Chip & Signature is the default for 99% of US issued cards, meaning the terminal will print a receipt for you to sign. The only issue tends to be finding a pen. Some cards do have a PIN, but it is usually secondary to signature. The only way you would be prompted for the PIN is if the merchant terminal will not accept a signature authorization.

You will normally need PIN at ticket machines, etc, unless you use contactless (and the transaction is small enough). When paying at manned points of sale, you can usually use a card without PIN*, but if your card does have PIN, you will need to enter it.
